Heligan pizza oven-a delightful addition
Heligan pizza oven -a delightful addition to the Lost Gardens
We were approached by Nicolas Legendre, the Catering Manager of Heligan Gardens in Autumn 2016 with a view to installing a pizza oven in an outdoor space they were creating adjacent to the restaurant.
Almost 2 years after original conception, the area was designed and remodelled by the Heligan Team and we were able to create the Pizza Oven and hand over the project for the finishing touches. The Outdoor Eatery and Pizza Oven opened to the public in 2018 to warm appreciation and enjoyment by Heligan’s visitors and staff alike.
While camping locally at Pentewen Sands Holiday Park between St Austell and Mevagissey, we installed the oven in June 2018 whilst the Heligan in-house carpentry team built the counters, prep areas and roof. The outdoor cooking area also features a DrumBQ next to the pizza oven to relieve pressure on the extremely busy restaurant and let the chefs experiment with a wider range of baked goods cooked at high temperature with produce sourced from their own extensive fruit and vegetable garden.
Heligan pizza oven is a unique conception of French oven manufacturer Four Grand-Mere, who have designed an unusual transverse wood-fired oven, one that is wider than deep, enabling the chef to access all parts of the oven easily and without setting one pizza behind another. Available in two models, the T1350 and T1500 both can be specified in either chamotte or brick or as standard or raised height. See our commercial transverse ovens here.
The chefs source their ingredients from local suppliers and their own extensive walled fruit and vegetable garden. They are also experimenting with foraged wild food from the 200 acre estate so be prepared to have your taste buds tickled when you visit!
“We have now established a large working team with its own vision for our third decade. The award-winning garden restoration is already internationally acclaimed; but our lease now extends into well over 200 acres, leaving the project far from complete. We intend Heligan to remain a living and working example of the best of past practice, offering public access into the heart of what we do.
Our contemporary focus is to work with nature, accepting and respecting it and protecting and enhancing the variety of habitats with which our project is endowed.” read more here about the history of The Lost Gardens of Heligan, near Mevagissey ,Cornwall.
“On a personal note, the Heligan Pizza Oven is a popular and much loved addition to our food offering and here in the Marketing Team we love it when it is open and we can get our hands on a scrummy Heligan pizza!”
