We were approached by Nicolas Legendre, the Operations Director of Heligan Gardens in Autumn 2016 with a view to installing a pizza oven in an outdoor space they were creating adjacent to the restaurant. Almost 2 years on, we finally handed over the project after an extensive remodelling of the outdoor seating area and waiting for funds to come through from various fund-raising ventures.
We installed the oven in June 2018 whilst the Heligan in-house carpentry team built the counters, prep areas and roof. The outdoor cooking area also features a DrumBQ next to the pizza oven to relieve pressure on the extremely busy restaurant and let the chefs experiment with a wider range of baked goods cooked at high temperature with produce sourced from their own extensive fruit and vegetable garden.
Heligan pizza oven is a unique conception of French oven manufacturer Four Grand-Mere, who have designed an unusual transverse wood-fired oven, one that is wider than deep, enabling the chef to access all parts of the oven easily and without setting one pizza behind another. Available in two models, the T1350 and T1500 both can be specified in either chamotte or brick or as standard or raised height.
The chefs source their ingredients from local suppliers and their own extensive walled fruit and vegetable garden. They are also experimenting with foraged wild food from the estate so be prepared to have your taste buds tickled when you visit!
