Under some circumstances, usually during the build, we can retrofit any Four Grand-Mere wood-fired oven with an Italian Avanzini gas burner to make it compliant with smoke control areas regulations or make temperature easier to regulate automatically via a thermocouple and digital thermometer display. This is especially true when specifying a raised dome as the French burner is designed for a standard low dome.
We also have a range of rotating hearth ovens with gas burner or combination wood/gas fuel, so please ask when contacting us. Rotating ovens have a much higher output and lower labour input than static hearths as the hearth turns the pizza rather than the chef. Pizzas can be unloaded and loaded as soon as space is available making it much easier to regulate table orders.
Gas safety- Please note that you must use a Gas Safe engineer to make gas connections and any exhaust must run into a regulated extraction system or into its own dedicated flue to the exterior. All ovens can be adapted to run on mains gas or LPG
A note on the exterior steel frame- in the illustrations, the frame is shown as square. It is now supplied canted so the frame follows the curve of the insulation making it easier to render over. We normally pack out around the frame with extra insulation so it is level with the frame and then apply our render system. In this way it is still possible to have a dome shape for a more traditional look if the oven can be seen in an open kitchen.
