ABOUT PANINI

Italy’s greatest cultural export in the last decade has been the seductively simple, yet flavour bursting pressed sandwiches known as Panini. Traditionally found in cafes, bars and trattorias from Firenze to Napoli, Venezia to Turino, the popularity of the Italian Panini has surged across Europe, and recently to North American shores.

Panini is simply the Italian name for sandwich, however it is almost always used in reference to sandwiches that are placed in a two-sided cooking press that compresses and grills the sandwich until hot and toasted.

Unlike a Pie Iron, a Panini Press is not designed to crimp the bread of the sandwich. Rather, the goal is to uniformly compress the sandwich as it toasts without the bread or ingredients being trimmed by the edge of the cooker.

Using expressive and fresh ingredients are key to the traditional Panini sandwich. This starts with quality bread such as ciabatta rolls, foccacia or baguette - sliced open and filled with your choice of vegetables, cheese or meats creating a delicate balance of flavours as the panini toasts.

Recipes

Basic Sweet Waffle Batter

250g plain flour
½ teaspoon baking soda
1 teaspoon baking powder
4 tablespoons castor sugar
3 medium eggs
50g melted butter, cooled
200ml buttermilk

  1. Sift the flour, baking soda and baking powder into a bowl.
  2. Stir in the sugar.
  3. Whisk the eggs, melted butter, and buttermilk together.
  4. Mix into the dry mix and whisk to a smooth batter.
  5. Leave to sit for five minutes.
  6. Pour, as per instructions, into waffle iron and cook.
  7. Remove from the waffle iron and drizzle with maple syrup or serve with berries or bananas and pecan nuts or chocolate sauce.

Or try the following:

Cinnamon Waffle
with roasted plums
and honeycomb cream

For the waffles add a heaped teaspoon of cinnamon.

Roasted Plums

6 plums, halved and stoned
100g castor sugar
Zest and juice of 1 lemon
1 teaspoon vanilla extract
200ml red wine

  1. Place the plums in a baking dish.
  2. Boil the other ingredients together until the sugar has dissolved and is syrupy.
  3. Pour over the plums and cover with foil.
  4. Bake at 180oc for half an hour or until soft.

Honeycomb cream

200ml double cream
50g crushed honeycomb (or use chocolate covered honeycomb bars)
  1. Whip the cream lightly and fold in the honeycomb.
